Home-Made Mini Pizza (a healthy recipe)
In a large bowl, combine all ingredients and stir well until the dough begins to form a ball and pull away from sides of bowl. Knead dough by hand, while still in bowl, until smooth; then form a ball. Press dough into an oiled baking sheet or pizza pan using your fingertips, leaving a thicker edge to hold fillings in.
1 tsp. baking powder
1/4 tsp. salt
1/3 cup milk
3 tbsp. olive oil
(This amount of dough will make a medium sized pizza perfect for two people.)
Add whatever toppings you like.
This is what I did:
Spread tomato paste, add a few flakes of shaved parmesian, a thin layer of spinach leaves, and then sliced peppers, pineapple and tomatoes.
Mine turned out soooooooo delicious!!
